Buttermilk adds tang and helps the batter rise. No buttermilk? Add 1 tablespoon lemon juice or vinegar to 1 cup of milk and let it sit for 5–10 minutes.
Mix just until the dry ingredients are combined. A few lumps are good. Overmixing = flat pancakes.
Let it sit for 10 minutes. This gives time for the ingredients to activate and fluff up.
Make sure your skillet is hot before pouring in batter. A medium heat with a light grease layer works best.
