Sheer Khurma, meaning “milk with dates,” is a beloved dessert prepared especially for Eid. This indulgent vermicelli pudding is more than just a dish — it’s a tradition that brings families and friends together to celebrate love, warmth, and joy.
Slow-cooked in full cream milk, Sheer Khurma is enriched with roasted vermicelli, ghee, sugar, cardamom, chopped dates, and an assortment of dry fruits like almonds, pistachios, and cashews. Some even add saffron and rose water for that extra festive aroma.
Heat ghee in a deep pan. Add the vermicelli and roast on low flame until golden brown.
Pour in the milk and let it simmer. Stir occasionally and cook until the vermicelli softens and the milk thickens slightly.
Add sugar, chopped dates, and crushed cardamom. Stir gently and let it cook for another 5–7 minutes.
Garnish with chopped almonds, cashews, and pistachios. You may also add saffron strands or a splash of rose water before serving.
Sheer Khurma can be served warm or chilled, depending on your preference. Garnish with extra nuts for a royal touch. Serve it to your guests with a warm smile — it’s a bowlful of Eid happiness!
