Veg cutlets are one of the most popular vegetarian snacks in Indian homes. These golden-brown patties are crispy on the outside and soft on the inside, made with a mix of mashed vegetables, potatoes, and spices. Whether you're looking for a tea-time treat, a lunchbox filler, or a healthy starter, homemade veg cutlets are an easy win!
Steam or boil chopped carrots, peas, and beans until soft. Mash them slightly and keep aside.
In a large bowl, mash the boiled potatoes. Add cooked veggies, chopped onions, ginger-garlic paste, red chili, turmeric, garam masala, salt, and coriander leaves. Mix everything well.
Add bread crumbs to absorb moisture and form a firm dough. Shape the mixture into round or oval cutlets using your hands.
Dip each cutlet in a cornflour-water slurry and roll it in bread crumbs to get an even coating. This gives a crispy outer layer after frying.
Heat oil in a pan and shallow fry or deep fry the cutlets on medium flame. Cook until golden brown on both sides.
Serve immediately with green chutney, tamarind sauce, or ketchup. Pairs wonderfully with masala chai too!
